This is the time of year when I crave comfort foods. Perhaps it’s due to Daylight Savings time when the days become shorter and colder. I have quite a list of comfort foods and most of them are linked to my childhood. To name a few, my mother’s lasagna with miniture meatballs, arancini, pastina with butter and cheese and Peppers Stuffed with Italian Sausage and Rice.
I love the combination of rice with sausage, peas and chunks of mozzarella. The peppers are blanched first before being stuffed with the filling. The stuffed peppers can be prepared a day ahead baked in the oven the next day. My family enjoys eating red peppers either raw or roasted, but definitely Peppers Stuffed with Italian Sausage and Rice is their favourite.
