Cooking with Quebec Maple Syrup


The Cooking with Québec Maple Syrup cookbook by Anne Fortin is one of the many cookbooks in my collection jammed with post-it notes.  It combines over 60 maple syrup recipes made by some of Québec’s well known chefs. Anne Fortin is the owner of the Libraire Gourmande bookshop located in Montreal’s famous Jean-Talon Market.

I acquired a taste for maple syrup years ago at a sugar shack  and now I buy it by the case to cook with or to drizzle on pancakes, waffles, ice cream or Fench toast.  Some of the recipes I have made from the Cooking with Québec Maple syrup cookbook are the Pouding Chômer (Poor Man’s Pudding), Upside-Down Apple Pie with Maple Caramel, Apple Maple Syrup Muffins, Braised Root Vegetables à  l’Érable and Chicken with Cranberry, Thyme and Maple (my favourite).  My family has a sweet tooth so needless to say they devoured every recipe I made.

    I love to use apple syrop as a sweetener in the maple cinnamon meringue recipe that I have. It's a perfect way to cut out the white sugar and it gives it a great flavour.

    I heart maple syrup! Quite excited to go check out this book at the bookstore! I love to drizzle maple syrup on crêpes. It's a messy, drippy, fork and knife affair to eat crêpes with maple syrup on top, but so, so good. Really though, I love it on pancakes, waffles, and French toast too. And pouding chômeur is great.     I grew up in Quebec and now live on Vancouver island, so I miss visiting the sugar shack and would LOVE to receive this book. I feel that I have maple syrup in my veins ;-) These days I love to drizzle maple syrup on plain Greek Yogurt.. those two flavours complement each other so well. But you asked about our very favourite way to eat maple syrup so I'm going to get real crazy here and tell you my most memorable maple syrup eating ever... Are you ready for it??? Okay, it was at a sugar shack in Quebec, many years ago... EGGS POACHED IN MAPLE SYRUP!!! I recreated this recipe about a dozen years ago for a totally decadent New Year's day brunch and it was just as amazing as the first time. Crazy, yes. But crazy good!     I thought I submitted my comment, but it's missing from the page for some reason.,, My favourite way to eat maple syrup is simple - crepes! It's a classic combination and crepes are a perfect vehicle for the maple syrup. I use maple syrup in my cooking a lot.
